  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 eggs
  • 1/2 cup quick oats
  • 2 cups powdered sugar
  • 1/2 cup unsalted butter (softened)
  • 1 tsp vanilla extract
  • 2 teaspoons cinnamon
  • 1/2 tsp nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C). Line a cupcake pan with liners and lightly spray them with non-stick cooking spray.
  2. In a large bowl, combine the spice cake mix, water, vegetable oil, eggs, and quick oats. Mix until just combined.
  3. Pour the batter into the lined cupcake pan and bake according to package directions until golden brown and a toothpick comes out clean. Let cool completely on a wire rack.
  4. While cooling, prepare the frosting by creaming softened butter in a bowl. Gradually add powdered sugar, vanilla extract, cinnamon, and nutmeg until smooth.
  5. Once cooled, frost each cupcake generously using a piping bag or Ziploc bag with one corner snipped off.
