  • 4 bone-in skin-on chicken thighs (or boneless chicken breasts)
  • 1 cup long-grain white rice (or brown rice)
  • 2 tablespoons olive oil
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 2 ½ cups chicken broth (or vegetable broth)
  • Juice and zest of 1 lemon
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
  • 1 tablespoon fresh rosemary (chopped or 1 teaspoon dried rosemary)
  • Salt and pepper (to taste)
  • Fresh parsley (chopped, for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onions until translucent.
  2. Add chicken thighs skin-side down and brown on both sides; remove temporarily.
  3. Cook minced garlic in the same pot until fragrant.
  4. Stir in rice, broth, lemon juice, zest, thyme, rosemary, salt, and pepper.
  5. Return browned chicken to the pot on top of the rice mixture. Cover and simmer on low heat for about 30 minutes.
  6. Garnish with chopped parsley before serving.
