  • 1/4 cup maple syrup
  • 1/4 cup powdered sugar
  • 1/3 cup almond flour
  • 8 ounces white chocolate melting wafers
  • 2 teaspoons coconut oil

Instructions

  1. In a mixing bowl, combine peanut butter, maple syrup, powdered sugar, almond flour, vanilla extract, and salt. Mix until smooth.
  2. Portion the mixture into 2-tablespoon servings, roll into balls, then shape into ovals.
  3. Freeze shaped eggs on a parchment-lined sheet while preparing the coating.
  4. Melt white chocolate wafers with coconut oil in the microwave until smooth. Add spirulina and matcha for coloring.
  5. Dip each egg into the melted chocolate using a toothpick and return to the lined sheet.
  6. Create speckles by flicking cocoa powder mixed with water over each egg.
  7. Refrigerate until set.
