  • 4 cups shredded cabbage
  • 1 1/2 cup finely diced pineapple
  • 1 cup shredded carrot
  • 1/2 red onion (fine dice)
  • 2 jalapeños (de-seeded and finely diced)
  • 1/2 bunch cilantro (stems and leaves finely chopped)
  • 3 tablespoons white vinegar
  • Juice of 1 lime (about 2 tablespoons)
  • 3 tablespoons neutral oil
  • 1 teaspoon kosher salt
  • Black pepper (to taste)

Instructions

  1. In a small jar, combine 3 tablespoons of white vinegar, the juice of 1 lime, 3 tablespoons of neutral oil, 1 teaspoon of kosher salt, and black pepper to taste. Seal tightly and shake until emulsified.
  2. In a large bowl, mix together 4 cups of shredded cabbage, 1 1/2 cups of diced pineapple, 1 cup of shredded carrots, 1/2 finely diced red onion, 2 diced jalapeños (de-seeded), and 1/2 bunch of chopped cilantro.
  3. Pour the vinaigrette over the vegetable mixture and toss well using tongs until all ingredients are evenly coated. Let sit in the fridge for at least 5 minutes before serving to enhance flavors.
