  • 2 teaspoons baking powder

Instructions

  1. Preheat the oven to 425°F and line muffin tins with parchment paper.
  2. In a medium bowl, whisk together vegetable oil, sugar, eggs, almond extract, and milk until fluffy.
  3. In another bowl, mix flour, pistachio pudding mix, baking powder, and salt.
  4. Gently fold dry ingredients into the wet mixture until just combined; do not overmix.
  5. Spoon batter into muffin tins about three-quarters full and sprinkle with coarse sugar if desired.
  6. Bake at 425°F for 6 minutes; then reduce heat to 350°F and bake for an additional 11-12 minutes until golden brown.
  7. Cool in the tin for five minutes before transferring to a cooling rack.
