  • 1 scallion
  • 3 tablespoons vegetable oil
  • 6 scallions (white and green parts separated)

  • 1/2 teaspoon sugar
  • 1/2 cup reserved poaching water
  • 15 grams minced ginger

Instructions

  1. In a pot, boil 4 cups of water with ginger slices and scallion. Gently lower in chicken and bring back to a boil, then reduce heat to low.
  2. Cover and simmer for 10 minutes. Turn off heat, keeping the lid on for an additional 15 minutes.
  3. Transfer chicken to ice water for 5 minutes, then shred.
  4. For the sauce, heat vegetable oil in a pan, sauté scallion whites until crisp. Add soy sauce, sugar, and reserved cooking water; bring to a boil before stirring in minced ginger and chopped scallion greens.
  5. Pour sauce over shredded chicken and enjoy!
