  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cloves
  • 1/2 tsp salt
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 1 cup canned pumpkin puree
  • 2 large eggs
  • For the Cream Cheese Swirl: 6 oz cream cheese (softened)
  • 1/4 cup granulated sugar
  • 1 egg yolk

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In a large bowl, mix granulated sugar, brown sugar, and vegetable oil until well combined. Add pumpkin puree, eggs, and vanilla extract; mix until smooth.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. In a small bowl, beat cream cheese with sugar, egg yolk, and vanilla extract until creamy.
  6. Spoon pumpkin batter into each muffin cup halfway full. Dollop cream cheese mixture on top and swirl gently with a toothpick.
  7. Bake for about 18–22 minutes or until a toothpick comes out clean from the center.
  8. Allow muffins to cool in the tin for 5 minutes before transferring to a wire rack.
