  • 24 oz (700 g) raspberries, fresh or frozen
  • ⅔ cup white sugar
  • ½ cup (113 g) unsalted butter, room temperature
  • 1 cup (200 g) white sugar
  • 1 large egg
  • 1 ½ cups (190 g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ⅓ cup (80 g) milk
  • 1 teaspoon vanilla extract
  • ½ cup (120 g) raspberry coulis
  • 1 cup (227 g) unsalted butter, room temperature
  • 1 can (400 g) sweetened condensed milk
  • ½ cup (120 g) raspberry coulis
  • 12 fresh raspberries

Instructions

  1. Prepare the raspberry coulis by cooking raspberries with sugar until thickened. Blend and strain to cool.
  2. Preheat the oven to 350°F (180°C). Cream butter and sugar together, then add an egg, dry ingredients, milk, vanilla, and half of the cooled raspberry coulis.
  3. Fill cupcake liners with batter and bake for about 17 minutes until springy.
  4. Cool completely before filling centers with raspberry coulis.
  5. For the frosting, whip butter and sweetened condensed milk until airy; fold in remaining raspberry coulis.
  6. Frost cooled cupcakes generously and top with fresh raspberries.
