  • lbs carrots, peeled and halved lengthwise
  • 2 tablespoons olive oil
  • 1 cup whole-milk ricotta cheese
  • ¼ cup honey
  • ½ teaspoon red pepper flakes
  • 1 teaspoon apple cider vinegar
  • Zest of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Toss the halved carrots with olive oil, salt, pepper, and smoked paprika (if using). Spread cut-side down on the baking sheet.
  3. Roast for 25–30 minutes until golden brown and tender, flipping halfway through.
  4. Meanwhile, blend ricotta, cream (or milk), olive oil, lemon zest, salt, and pepper in a food processor until smooth. Chill until serving.
  5. In a saucepan over low heat, warm honey. Stir in red pepper flakes for about 3-4 minutes; add apple cider vinegar and cool slightly.
  6. Serve by spreading whipped ricotta on plates, topping with roasted carrots and drizzling with hot honey.
