Ingredients

Scale
  • 1 cup Unsalted Butter (or vegan butter)
  • 3/4 cup Granulated Sugar
  • 1/2 cup Light Brown Sugar
  • 1 large Egg Yolk (or flax egg)
  • 2 tablespoons Light Corn Syrup (or honey)
  • 1 teaspoon Pure Vanilla Extract
  • 1 teaspoon Maple Extract (or maple syrup)
  • 2 cups All-Purpose Flour (or gluten-free flour blend)
  • 1 teaspoon Ground Cinnamon
  • 1/4 teaspoon Ground Nutmeg
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1/4 cup Granulated Sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together 1 cup of unsalted butter with 3/4 cup granulated sugar and 1/2 cup light brown sugar until light and fluffy.
  3. Mix in 1 large egg yolk (or flax egg), 2 tablespoons light corn syrup (or honey), 1 teaspoon pure vanilla extract, and 1 teaspoon maple extract.
  4. In a separate bowl, whisk together 2 cups all-purpose flour, 1 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, 1 teaspoon baking soda, and 1/2 teaspoon salt. Gradually add this dry mixture to the wet ingredients until just combined.
