  • 1/3 cup full-fat sour cream
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2/3 cup grenadine
  • 1/3 cup water
  • For the frosting: 1 cup unsalted butter (room temperature), 4 cups powdered sugar, 2 tablespoons grenadine, 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, lemon zest, and lime zest.
  3. In another bowl, beat sugar and butter until light and fluffy.
  4. Add eggs one at a time; mix in sour cream, vegetable oil, vanilla extract, grenadine, and water.
  5. Gradually add dry ingredients to wet mixture until just combined.
  6. Spoon batter into lined cupcake tins about two-thirds full.
  7. Bake for about 14 minutes or until a toothpick comes out clean; cool completely.
  8. Prepare frosting by mixing butter and powdered sugar until smooth; add grenadine and salt.
  9. Frost cooled cupcakes and top with maraschino cherries.
