  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 red bell pepper, sliced
  • 1 cup snap peas, trimmed
  • 3 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • Cooked rice or noodles for serving

Instructions

  1. Rinse shrimp under cold water and pat dry. Season with salt and pepper.
  2. Prepare vegetables: trim asparagus, slice bell pepper, rinse snap peas; mince garlic and ginger.
  3. In a bowl, mix soy sauce, cornstarch, and water until combined.
  4. Heat vegetable oil in a large skillet over medium-high heat.
  5. Sauté garlic and ginger for about 30 seconds until fragrant.
  6. Add shrimp in a single layer; cook for 2-3 minutes until pink. Remove from pan.
  7. Stir-fry asparagus and red bell pepper for 2-3 minutes until slightly softened.
  8. Add snap peas; continue stir-frying for another 2 minutes.
  9. Return shrimp to the pan; add sauce mixture and stir until thickened (1-2 minutes).
  10. Serve over rice or noodles; garnish with sesame seeds and green onions if desired.
