  • 1 pound dried elbow pasta
  • 5 1/2 cups whole milk
  • 4 cups shredded smoked Gouda cheese (divided)
  • 1/2 cup all-purpose flour
  • 8 tablespoons unsalted butter (divided)
  • 1/2 cup shredded Parmesan cheese (divided)
  • Seasonings: Dijon mustard, salt, black pepper, cayenne pepper, nutmeg
  • Topping: 2 cups Panko breadcrumbs, fresh thyme leaves

Instructions

  1. Preheat your oven to 375°F and grease a casserole dish.
  2. Prepare the topping by mixing Panko breadcrumbs, half of the Parmesan cheese, thyme leaves, and melted butter in a bowl.
  3. In a saucepan over medium heat, warm the milk. In another skillet, melt 6 tablespoons of butter and whisk in flour until bubbling. Gradually add warm milk while whisking until thickened.
  4. Stir in Dijon mustard, salt, nutmeg, black pepper, cayenne pepper, cream cheese, and most of the smoked Gouda.
  5. Cook the elbow pasta in boiling water until two minutes shy of al dente; drain and mix with the cheese sauce.
  6. Transfer the mixture to the baking dish and top with remaining Gouda and breadcrumb mixture.
  7. Bake for about 30 minutes until golden brown and bubbly.
