  • 1 and 1/2 cups (190g) all-purpose flour (spooned & leveled)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2/3 cup (53g) old-fashioned whole rolled oats
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (8 Tbsp; 113g) unsalted butter, softened to room temperature
  • 1 cup (200g) packed light or dark brown sugar
  • 2 Tablespoons (30ml) eggnog, at room temperature
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 10 Tablespoons (142g) unsalted butter, softened to room temperature
  • 2 cups (240g) confectioners’ sugar
  • 3 Tablespoons (45ml) eggnog, at room temperature
  • 1/4 teaspoon pure vanilla extract
  • Pinch each salt, ground cinnamon, and ground nutmeg

Instructions

  1. Whisk together flour, cinnamon, nutmeg, oats, baking soda, and salt in a bowl.
  2. In a separate bowl, cream softened butter and brown sugar until fluffy. Mix in the egg, eggnog, and vanilla until combined.
  3. Gradually add dry ingredients to wet mixture until just combined. Chill dough for at least 2 hours.
  4. Preheat oven to 350°F (177°C). Roll chilled dough into balls and bake for 11-12 minutes until lightly browned.
  5. For the filling, beat softened butter with confectioners’ sugar, eggnog, vanilla, cinnamon, nutmeg, and salt until fluffy.
  6. Once cookies cool completely, spread or pipe filling between two cookies.
