  • 1 carrot, shredded
  • 2 cups shredded purple cabbage
  • 1 red bell pepper, thinly sliced
  • 2 Persian cucumbers, thinly sliced
  • 2 stalks green onion, chopped
  • ½ lb cooked shrimp (or protein of choice)
  • ¼ cup natural peanut butter
  • Juice of 1 lime
  • 1 clove garlic, minced
  • 1 Tbsp ginger root, finely grated
  • 2 Tbsp low sodium soy sauce (or coconut aminos)
  • 2 Tbsp rice vinegar
  • 2 tsp toasted sesame oil
  • 1 Tbsp honey (or sweetener of choice)
  • ½ tsp crushed red pepper flakes

Instructions

  1. Prepare the Vegetables: Shred the carrots and cabbage, slice the cucumbers and red bell pepper, and chop the green onions.
  2. Cook the Noodles: Boil the vermicelli rice noodles according to package instructions until tender but firm. Drain well.
