  • 1 box (13.25 oz) vanilla cake mix
  • ⅓ cup neutral oil (vegetable, avocado, canola)
  • 1 cup milk or water
  • 4 large eggs
  • ¼ cup softened unsalted butter
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • Pinch of salt
  • 12 oz candy melts
  • White nonpareils or sprinkles

Instructions

  1. Preheat your oven to 325-350°F (162-175°C) based on package instructions.
  2. In a bowl, mix together the cake mix, oil, milk or water, and eggs until well combined.
  3. Pour the batter into a greased baking pan and bake according to package instructions. Check for doneness with a toothpick.
  4. Once baked, crumble the cake while it's still warm into a large bowl.
  5. In another bowl, mix together butter, powdered sugar, vanilla extract, salt, and milk until smooth to create buttercream.
  6. Combine crumbled cake with buttercream mixture and roll into balls (about 1¼ inches).
  7. Chill the balls in the freezer for 15 minutes before inserting lollipop sticks dipped in melted candy melts.
  8. Dip each ball into melted candy melts until fully coated and decorate with sprinkles.
  9. Place upright in a styrofoam block to set.
