  • 1/4 cup olive oil
  • 1/3 cup fresh lime juice (approx. 2 limes)
  • zest of 2 limes
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1 tablespoon garlic, minced
  • 1 tablespoon soy sauce (use Tamari for gluten-free)
  • 1/4 teaspoon kosher salt
  • 12 tablespoons cilantro, chopped (optional)
  • 12oz corn (grilled, boiled or frozen)
  • 1 cup cherry tomatoes, quartered
  • 12 jalapeños, diced (remove seeds and white membrane)
  • 1/2 red onion, diced
  • 2 teaspoons lime zest
  • 2 tablespoons lime juice
  • 1/2 cup cilantro, roughly chopped
  • 1/4 teaspoon kosher salt, more to taste
  • 1/8 teaspoon ground black pepper
  • 1/4 teaspoon chili powder (optional)
  • 1/4 teaspoon cumin (optional)
  • 23 tablespoons chicken broth, more if needed
  • 1 tablespoon garlic, minced
  • 1/2 red onion, sliced
  • 1/2 yellow onion, sliced
  • 3 bell peppers (red, green, orange), sliced
  • 2 tablespoons fajita seasoning
  • additional kosher salt and ground black pepper, to taste
  • cilantro lime rice (homemade or store-bought)
  • cilantro lime sauce
  • homemade guacamole or avocado chunks
  • tomatoes or blender salsa
  • sour cream, regular or dairy-free sour cream
  • lime wedges
  • fresh cilantro

Instructions

  1. Prepare the corn salsa by mixing corn, cherry tomatoes, jalapeños, red onion, lime zest, lime juice, cilantro, salt, pepper, chili powder, and cumin in a bowl. Set aside.
  2. Marinate the flank steak by combining olive oil, lime juice, lime zest, chili powder, cumin, garlic, soy sauce (or Tamari), and cilantro in a resealable bag; add the steak and let it marinate for at least 30 minutes.
  3. Sear the marinated steak in a hot skillet for 4-5 minutes per side until browned and cooked to medium-rare (130-135°F). Let it rest before slicing against the grain.
  4. Cook the veggies by adding chicken broth to the skillet; sauté garlic until fragrant then add onions and bell peppers along with fajita seasoning until tender.
  5. Assemble bowls starting with cilantro lime rice as the base; layer with sautéed veggies, sliced steak, corn salsa, guacamole or avocado chunks, sour cream, fresh tomatoes, lime wedges, and cilantro.
