  • ¾ cup granulated sugar
  • 2 large eggs
  • ¼ cup sour cream
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1 cup fresh or frozen strawberries (hulled)
  • 2 tablespoons granulated sugar (for strawberry swirl)
  • 1 teaspoon cornstarch
  • 1 tablespoon water

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press into the bottom of a greased baking dish.
  2. Beat softened cream cheese until smooth. Gradually add sugar, then incorporate eggs one at a time. Mix in sour cream, lemon juice, lemon zest, and vanilla extract until smooth.
  3. In a saucepan over medium heat, combine strawberries, sugar, cornstarch, and water. Cook until the mixture thickens into a sauce.
  4. Pour cheesecake filling over the crust and dollop strawberry sauce on top; swirl with a knife.
  5. Bake for about 40 minutes until set but slightly jiggly in the center. Cool at room temperature before chilling in the refrigerator for at least four hours or overnight.
