  • 440g cream cheese
  • 270g heavy cream
  • 120g sugar
  • 12g matcha powder
  • 3 eggs
  • 250g mascarpone
  • 330ml heavy whipping cream
  • 6 tbsp freeze-dried strawberry powder

Instructions

  1. Preheat your oven to 240°C (465°F) and line a 24cm (9-inch) round cake pan with parchment paper.
  2. In a blender, mix cream cheese, eggs, sugar, matcha powder, all-purpose flour, heavy cream, and salt until smooth.
  3. Pour the mixture through a sieve into the prepared pan and bake for 35 minutes until browned on top yet jiggly in the center.
  4. Let it cool before refrigerating for at least 2-3 hours.
  5. For the topping, whip heavy whipping cream with mascarpone, powdered sugar, and freeze-dried strawberry powder until stiff peaks form.
  6. Spread the strawberry mixture over the chilled cheesecake and decorate with fresh strawberries.
