  • 1.5 cups non-fat Greek yogurt
  • ⅓ cup monkfruit sweetener
  • ⅓ cup cornstarch

  1. Separate the egg yolks from the whites, ensuring no yolk gets into the whites.
  2. Whip the egg whites until stiff peaks form.
  3. In another bowl, beat the egg yolks with monkfruit sweetener (and optional vanilla) until fluffy.
  4. Fold in the Greek yogurt gently.
  5. Sift in the cornstarch and combine well.
  6. Carefully fold in the whipped egg whites using gentle motions.
  7. Line a baking dish with parchment paper and pour in the batter.
  8. Set up a water bath by placing your baking dish on a larger sheet filled with boiling water.
  9. Bake at 330°F (160°C) for 45 minutes, then increase to 350°F (180°C) for an additional 15 minutes.
  10. Cool slowly in the oven with the door slightly open.
