  • 4 ears fresh corn, cooked and kernels sliced off
  • 1 pint cherry or grape tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1/2 cup chopped fresh cilantro
  • 1 large avocado, diced
  • Juice of 2 limes
  • Salt and black pepper, to taste

Instructions

  1. Cook the corn by boiling for 1½ – 2 minutes or grilling for a smoky flavor. Cool and slice off the kernels.
  2. While cooling, halve the cherry tomatoes and finely chop the red onion and cilantro.
  3. In a large bowl, combine cooled corn with tomatoes, onion, cilantro, lime juice, salt, and pepper. Toss gently.
  4. Chill in the refrigerator for at least one hour to enhance flavors.
  5. Just before serving, dice the avocado and mix it in or place it on top to maintain freshness.
