  • 5 ears fresh corn (shucked)
  • 2 medium roma tomatoes (diced)
  • 1 medium English cucumber (diced)
  • 1 medium avocado (diced)
  • 1/2 medium red onion (minced)
  • 1/2 cup chopped fresh basil
  • 1/4 cup chopped fresh mint leaves
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon apple vinegar vinegar
  • Salt and black pepper to taste

Instructions

  1. Cook the Corn: Bring a large pot of water to boil. Shuck the corn and boil for about 5 minutes until tender. Remove from water and let cool before cutting off kernels.
  2. Prepare the Veggies: Dice the tomatoes, cucumber, and avocado; mince the red onion.
  3. Mix It: In a large bowl, combine corn kernels with diced veggies, basil, and mint.
  4. Make the Dressing: Whisk together olive oil, apple cider vinegar, apple vinegar vinegar, salt, and black pepper in a small bowl.
  5. Combine: Pour dressing over salad mixture and toss gently. Adjust seasoning if necessary. Serve chilled or at room temperature.
