  • 7 cups vegetable stock or broth
  • 3 ears sweet corn (kernels removed)
  • 1 sweet onion (diced)
  • 3 cloves garlic (finely chopped)
  • 1 1/4 cups arborio rice
  • 1 orange bell pepper (diced)
  • 4 1/2 tablespoons unsalted butter
  • 1 cup grated parmesan cheese (or plant-based alternative)
  • Optional: diced turkey strips

Instructions

  1. In a large pot, combine vegetable stock, spent corn cobs, and bay leaf over high heat until simmering. Reduce heat to low.
  2. In another pot, melt 3 tablespoons of butter over medium heat. Sauté diced onion until softened, then add garlic.
  3. Stir in arborio rice and lightly toast for 2-3 minutes.
  4. Deglaze the pot with grape juice, then add two ears of corn and bell pepper. Stir well.
  5. Gradually add warm corn stock while stirring frequently until rice is creamy and al dente (about 20-25 minutes).
  6. Finish with remaining butter and parmesan, adjusting seasoning to taste.
  7. Serve warm, topped with optional turkey strips and fresh herbs.
