  • 3 medium shallots (halved and thinly sliced)
  • 1 teaspoon Dijon mustard
  • 16 ounces frozen peas
  • 1 pear (diced)
  • 1 lemon (zest and juice)
  • ½ cup chopped parsley
  • Freshly ground black pepper (to taste)

Instructions

  1. Prep the pear by peeling, slicing, and dicing it into small pieces. Toss with lemon juice to prevent browning.
  2. In a skillet over medium heat, cook diced turkey strips until golden brown. Remove and drain on paper towels.

  5. Fold in half of the turkey strips along with parsley and black pepper.
