  • 5 tablespoons olive oil (divided)
  • 1 pound gnocchi
  • 1 medium shallot
  • 2 tablespoons minced garlic (divided)
  • 2 tablespoons fresh thyme
  • 2 tablespoons fresh sage
  • 1.52 cups milk (of choice)
  • ½ teaspoon red pepper flakes
  • ½ teaspoon salt
  • ½ cup grated Parmesan
  • 2 cups kale

Instructions

  1. Preheat your oven to 400°F (200°C). Toss cubed butternut squash with 3 tablespoons of olive oil, salt, and pepper on a baking sheet. Roast for about 25 minutes until tender and caramelized.
  2. Boil salted water in a large pot. Add gnocchi; they are done once they float to the surface (about 2-3 minutes). Drain and set aside.
  3. In a skillet over medium heat, add the remaining olive oil, minced shallots, and garlic. Sauté until softened.
