  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1/4 cup cooled espresso or strong coffee
  • 8 oz mascarpone cheese
  • 1/2 cup heavy cream
  • Unsweetened cocoa powder for dusting

Instructions

  1. Prepare the Batter: In a bowl, cream together softened butter and sugar until fluffy. Beat in eggs one at a time. In another bowl, combine flour, baking powder, and salt. Mix milk with cooled espresso; alternate adding dry and liquid ingredients to the butter mixture until just combined.
  2. Bake Your Cupcakes: Preheat the oven to 350°F (175°C). Line a muffin tin with liners and fill each about two-thirds full. Bake for 15–20 minutes or until a toothpick comes out clean. Allow to cool in the pan for five minutes before transferring to a wire rack.
  3. Espresso Soak: Heat additional espresso with sugar until dissolved and brush over warm cupcakes.
  4. Make the Frosting: Beat mascarpone until smooth, then gradually add cold heavy cream while whipping until soft peaks form. Mix in powdered sugar.
  5. Decorate Your Cupcakes: Once cooled, frost cupcakes with mascarpone mixture and dust with cocoa powder.
