  • 1/2 cup Butter (melted plus extra for cooking)
  • 1/4 cup Sugar
  • 3 Eggs
  • 3 cups Buttermilk
  • 2 teaspoons Vanilla
  • 1/2 cup Macadamia Nuts (chopped)
  • 114 ounce Can Coconut Milk (not lite)
  • 1/2 cup Sugar
  • 2 Tablespoons Light Karo Syrup
  • Pinch of Salt

Instructions

  1. Preheat your oven to 250°F. Spread sweetened flaked coconut on a baking sheet and toast for 18-20 minutes, stirring halfway through.
  2. In a large bowl, combine flour, baking powder, and salt. Stir in melted butter, sugar, eggs, buttermilk, and vanilla until just mixed.
  3. Heat a skillet over medium-low heat. Pour about half a cup of batter for each pancake and sprinkle with toasted coconut. Cook until bubbles form; flip and cook until golden brown.
  4. For the coconut syrup, combine canned coconut milk, sugar, and Karo syrup in a saucepan over medium heat. Simmer for about 8-10 minutes until slightly thickened.
  5. Serve pancakes stacked high with sliced bananas and drizzled with warm coconut syrup.
