  • 2 teaspoons vanilla bean paste
  • 1 ¼ cup pastry flour
  • ½ teaspoon salt
  • ½ teaspoon cardamom
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ cup vegan butter
  • ¼ cup shortening
  • 1 teaspoon vanilla bean paste
  • ½ teaspoon rosewater
  • 1 ½ cups powdered sugar
  • 2 tablespoons dried rose petals (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together oat or almond milk, sugar, olive oil, and vanilla bean paste until well combined.
  3. In another bowl, whisk together pastry flour, salt, cardamom, baking powder, and baking soda.
  4. Gradually add dry ingredients to the wet mixture and fold gently until just combined.
  5. Line a muffin tin with cupcake liners and fill each about two-thirds full with batter. Bake for 22 minutes or until a toothpick comes out clean.
  6. For the frosting, beat vegan butter and shortening until creamy. Gradually add powdered sugar and mix in vanilla bean paste and rosewater.
  7. Once cooled, frost the cupcakes generously and garnish with dried rose petals if desired.
