Ingredients

  • 7 to 8 cups seedless watermelon (cut into ¾ inch cubes)
  • 1 ½ cups fresh blueberries
  • 1 cup crumbled feta cheese
  • Fresh mint and basil leaves (thinly sliced)
  • Juice of 1 ½ limes
  • 1 tablespoon extra virgin olive oil
  • 1 to 2 tablespoons honey (to taste)
  • A pinch of salt

Instructions

  1. Make the Honey Lime Dressing: Combine lime juice, olive oil, honey, and salt in a mason jar. Shake until well mixed.
  2. Combine Ingredients: In a large bowl, mix watermelon, blueberries, mint and basil leaves, and three-quarters of the feta. Drizzle with dressing and toss gently.
  3. Serve and Garnish: Top with remaining feta and garnish with extra mint and basil before serving.
