  • 1 large sweet potato (about 12 ounces), diced
  • 1 lb flat iron steak, diced
  • 3 tbsp olive oil, divided
  • 2 bell peppers, diced
  • 4 green onions, sliced
  • 2 cloves garlic, minced
  • 2 tbsp coconut aminos
  • 1 tsp sea or kosher salt
  • 2 tsp cracked black pepper
  • 2 tbsp fresh chopped cilantro

Instructions

  1. Microwave the diced sweet potatoes with salt for about 4 to 6 minutes until tender.
  2. In a hot skillet, add 2 tablespoons of olive oil and sear the steak pieces for about 10 minutes until browned. Remove and set aside.
  3. In the same skillet, add another tablespoon of olive oil and brown the sweet potatoes for about 3–4 minutes.
  4. Make a well in the center of the skillet, sauté garlic until fragrant (about 1 minute).
  5. Add bell peppers and green onions; sauté until slightly tender (about 3–4 minutes).
  6. Combine cooked steak back into the pan with coconut aminos; toss gently until heated through.
  7. Garnish with cracked black pepper and fresh cilantro before serving.
