1/2 cup softened butter
1/3 cup brown sugar
1/4 cup granulated sugar
1 tbsp vanilla extract
1 egg (at room temperature)
1 & 1/4 cup old-fashioned whole rolled oats
1 cup all-purpose flour
1/4 tsp cinnamon
Pinch of nutmeg
1/2 tsp baking soda
1/4 tsp salt
3/4 cup powdered sugar
1.5 tbsp milk
1/4 tsp vanilla
Instructions
Preheat oven to 350°F (175°C).
In a mixing bowl, cream softened butter with brown and granulated sugars until fluffy. Add egg and vanilla; mix well.
In another bowl, whisk together flour, oats, cinnamon, nutmeg, baking soda, and salt. Gradually combine with wet ingredients.
Scoop dough onto a baking sheet and flatten slightly. Bake for about 10 minutes or until golden but soft.
